Mr Ivan Orkin is a native of Long Island who went to Tokyo and opened two ramen restaurants there – a bold move if there ever was one. Now he’s back in NYC with his flagship, and the ramen is as perfect as it gets: springy noodles, wholewheat or rye, and improbably deep soups that speak of hours of slow simmering. As well as the bowlfuls of wonder, Ivan does a few other Japanese classics brilliantly well and gives them a knowing New York twist.
