You can see the chefs making their daily batch of fresh pasta through the windows of this wonderful little Italian joint in Borough Market. Arrive early to avoid the lunch- and dinnertime queues that have snaked along Southwark Street since it opened in 2016. Plates are small – perfect for sharing, if that’s your thing – and the pasta is, as you would expect, precisely al dente. Try the pappardelle with eight-hour beef shin ragu or, our favourite, the pici cacio and pepe, worm-like pasta in a piquant salt and pepper sauce.
