A few more ingredients pass through the kitchen of this permanently busy Mission District joint, but flour and water are maybe the two most important. They go into the delightful handmade pastas and the dough for the pitch-perfect Neapolitan pizzas. The menu’s always changing, but expect simple but effective dishes such as black pepper tonnarelli carbonara, or a pizza with the best San Marzano tomatoes and fior di latte cheese.
