This stylish, modern restaurant – designed by architect Francisco Mangado, brings the traditional flavours of the Navarre region in the north of Spain to the capital. Azagra is a village in Navarre, and the hometown of husband-and-wife owners Mr Juan Miguel and Ms Anabel Sola, who’ve been operating a farm-to-table ethos since long before it became a trend. Azagra-grown produce such as asparagus, artichokes and peppers are delivered daily to their Madrid kitchen, and served up with the imagination and respect such freshness deserves. Boneless bull tail with boletus and suckling pig confit keep the meat eaters happy – and a loyal cohort of regulars returning again and again.
