In the River Valley district, a historic former shophouse has been delicately refurbished to accommodate this calming, minimal, wood-lined space for Japanese kappo dining. Translating as “to cut and cook”, kappo is an up-close style in which all prep and cooking are done in front of the diners. At Esora, that means the best seats are at the counter, where you can watch chefs create intricate and considered dishes such as wagyu with shiitake and aged red vinegar, or snow crab claypot.
